When eating in some hotels, we may be lucky to taste the delicious cold dish--quail preserved eggs. Today, I especially collect the quail preserved egg making method. Quail eggs, feed grade  zinc sulphate powder, lime and so on are raw materials of reserved quail eggs.

Ingredients: quail egg 10 kg, boiled water 10 kg, quick lime 2 kg, caustic soda 0.8 kg, salt 0.3 kg, black tea end 0.2 kg, copper sulfate 0.012 kg, zinc sulfate 0.012 kg.

1. Feeding liquid modulation: firstly, put the soda ash, black tea into the bottom of cylinder, and add into boiled water cylinder. Then fully mix copper sulfate, zinc sulfate into the solution and gradually add lime and salt, stirring well until it cooled.

2. Select and dip the qualified quail eggs into the prepared feeding liquid. It’s advisable to dip the eggs when fully sunk.
Notes in preserved period: seal crock mouth with double plastic cloth and kept it in 15-20 ℃ of the room temperature until mature.
Reserved with zinc sulphate and other ingredients, the deep green quail preserved eggs are elastic, smooth. It’s a very special and delicious cold dish.
